Tofu Pork Noodle Soup

Did you know that the most boring food I consider is Tofu? It was only way back in college that I learned that it can be a healthy replacement for meat. Even if I didn't like it, (most likely) due to how boring it was cooked but also of it's bland taste, I have no other option but to eat it.


In this series of Tofu recipes, I will share with you the recipes that passed the palates of my picky eater eldest. With these types of food, he really doesn't bother eating them at all despite trying to bribe him of it's benefits.

They loved noodles and soup so much that they could it eat it every single day of our lives. In this menu, I tried to incorporate it with our main ingredient today.


Here is the recipe:

Ingredients:

Tofu, fried, sliced in cubes
100 grams ground Pork
1 medium Onion, minced
3 cloves of Garlic, minced
1 small carrots, cubed
4 pcs Beans, cut into small slices
Ginger
Salt
Soy Sauce
Pepper
Anise seeds
Chicken Stock/ Chicken cubes
50 grams Pasta, cut into small pieces
Vegetable oil

Procedure:
  • Fry tofu in vegetable oil until it turns brown. Set aside. Slice into cubes when it's cold. 
  • Saute Garlic and Onion in vegetable oil until it turns brown.
  • Saute ground pork. Add Chicken stock and bring to a boil.
  • Add Anise seeds and Ginger and let it simmer.
  • Add Pasta and continuously mix until cooked so it will not stick together.
  • Put in Carrots and Beans and let it simmer for 30 seconds.
  • Add a dash of salt and pepper to taste. Serve hot.

Yield: 4-5 servings.
